Coconut Macademia Nut Chocolate Chip Oatmeal Cookies

Baking with chocolate continues. These are for a friend. I found the original recipe from Epicurious and decided to give it a go with some changes. Yields around 4-5 dozen cookies.


  • 1 cup butter, softened
  • 1 cup brown sugar
  • 3 tablespoons white sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup all purpose flour
  • 2 1/4 cup old fashioned oats
  • 1 1/2 cup unsweetened, finely shredded coconut
  • 12 ounces semi-sweet mini chocolate chips
  • 10 ounces chopped macademia nuts


  1. Preheat oven to 350 F.
  2. Beat butter and sugar together.
  3. Add eggs and vanilla.
  4. In a separate bowl, combine flour, baking soda, and salt.
  5. Add flour mixture to wet ingredients.
  6. Stir in oats, coconut, chocolate chips, and nuts.
  7. Place rounded tablespoonfuls of dough on greased baking sheets.
  8. Bake for 10 minutes.


  • Uh… you can compare to the original recipe to see what changes I made (not that many). Yeah, I’m being lazy.

After Thoughts

I didn’t try these cookies, but they smelled really good. My friend (aka guinea pig) tried them out and approved immensely. He said they weren’t too sweet at all which is a plus. My roommate says they are not crispy or doughy, but they are dense. Also, she said the macademia nuts (versus another nut) make the cookies much richer. Of course you can use any other nut, but this is a nice change from the usual. So my roommates have approved as well as the recipient of these cookies; thus, my baking is justified, haha.
