Oatmeal Cranberry Pecan Cookies

Ingredients
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 1/2 cups old fashioned oats
- 8 oz unsalted butter, softened
- 1 cup light brown sugar
- 1/2 cup sugar
- 2 eggs, lightly beaten
- 1 tablespoon honey
- 2 teaspoons vanilla
- 1 1/3 cups dried cranberries
- 1 cup chopped pecans
Directions
- Preheat oven to 350 F. Line baking sheets with parchment paper.
- Combine flour, baking soda, salt, cinnamon, and oats.
- Combine butter, brown sugar, sugar, eggs, honey, and vanilla in a separate bowl.
- Add the flour mixture to the wet mixture.
- Stir in cranberries and pecans.
- Place on baking sheets by the tablespoonfuls.
- Bake from 9-11 minutes.
I got this recipe from Recipe Zaar. These cookies are really sweet (probably because I added too much vanilla), but really good. Next time I would add more pecans and soak the cranberries in some juice. I used instant oats instead old-fashioned and I don’t think it made any real difference.
